missy l's buffalo chicken dip

Missy L, a co-worker of mine, makes her famous buffalo dip whenever she can. I had never tried it because she makes it with blue cheese, which I do not like. But I adapted it to my tastes by using ranch dressing, and it was dee-lish!

Missy L's Buffalo Chicken Dip

2 8-oz packages of low-fat cream cheese, softened
1 whole rotisserie chicken
1 bottle of Buffalo Wing sauce
1 jar of Marie's low-fat ranch or blue cheese dressing (from the produce section)
2 cups of shredded 4 or 5 cheese blend

Pre-heat oven to 350°. Spread the cream cheese in the bottom of a 9 X 13 glass baking dish. Pull chicken off the bones and shred; put into a large mixing bowl. Pour the Buffalo sauce and dressing into the bowl with the chicken and fold together. Spread the chicken mixture over the cream cheese in the baking dish. Top with shredded cheese.

Bake uncovered for 20 minutes, or until the cheese bubbles.

Serve with tortilla chips.

sweet pepper meat sauce

This is the best sauce I've ever made! I used ground chicken, but you could use any ground meat that suits your fancy.

Sweet Pepper Meat Sauce

2 lbs ground chicken
1 medium onion, chopped
1 clove garlic, minced
1 28-oz can tomato sauce
1 28-oz can diced tomatoes
1 green pepper, chopped
1 red pepper, chopped
¼ cup packed brown sugar
2 tbsp oregano
2 tbsp Italian seasoning
salt & pepper to taste

In a large pot, cook chicken and onions over medium heat until chicken is no longer pink. Stir in remaining ingredients; bring to a boil. Reduce heat, cover & simmer 30-40 minutes or until peppers are tender.

Serve over pasta with melted mozzarella and parmesan on top.
